CHICORY
CHICORY / ENDIVES
Chicory, also known as endives, is a leafy vegetable with slightly bitter, crisp leaves that can be enjoyed raw in salads or cooked for a milder flavor. It pairs well with cheeses, nuts, and vinaigrettes. Rich in vitamins A, C, and K, along with fiber and antioxidants, chicory supports digestion, boosts immunity, and promotes healthy skin. Its bitter compounds may also aid liver health.
CHICORY ROOT
Chicory Root is the thick, fibrous root of the chicory plant, often roasted and ground as a caffeine-free coffee substitute. It has an earthy, nutty flavor and is also used as a natural sweetener in the form of inulin. High in prebiotic fiber, it promotes gut health, supports digestion, and may help regulate blood sugar. Its antioxidant content also contributes to reduced inflammation and improved liver function.
